Better Breakfasts Gluten-Free

Banana French Toast

Do you need some kid-friendly meals to turn your children onto breakfast? How about a fruity slice of french toast?  I think of it as an upgrade from the standard American version. You can totally eliminate the cholesterol and still have good protein when you make banana french toast. In place of the eggs and milk, we’ve used a cup of firm tofu. And to make the batter even creamier, we’ve thrown in a ripe banana.

I think the whole family will love these with peanut butter and applesauce on top or a hearty helping of our Berry Good Sauce (who doesn’t like blueberries and strawberries)? These are kid, teen, and adult tested and they always ask for more. A friend’s seven-year-old only asks for Banana French Toast now. He doesn’t want the eggy ones anymore. I hope your children will feel the same.

CHEF’S NOTE: A single serving is 2 pieces of French toast. The nutritional information is for the batter only. You can increase the fiber in every bite by using delicious whole-grain bread.

GLUTEN-FREE FRIENDLY: Use firm gluten-free bread for making Banana French Toast. Our Millet Bread recipe works very nicely.

Banana HealthBites

Bananas are a popular fruit that contain many health benefits. They provide many helpful antioxidants, such as flavonoids and amines. These compounds are linked to a lower risk of heart disease. And because bananas are also loaded with potassium, they can help you lower your blood pressure naturally.

Ingredients

  • 8 ounces of firm tofu
  • 1 ripe banana
  • 1/2 cup water
  • 1 tsp maple syrup
  • 1 T vanilla extract
  • 1 tsp coriander
  • 8 slices whole grain bread

Instructions

  • Combine tofu and water in a blender. Process til mixture looks like a milk.
  • Add banana, maple syrup, vanilla and coriander. Process til smooth. Make sure there are no pieces of banana in the batter.
  • Pour the batter into a shallow bowl and dip each slice of bread. Or you can use a spatula and spread the batter on one side of the bread, lay it on a nonstick skillet. While it is cooking, spread the batter on the top side.
  • I like to preheat my nonstick pan, using a medium high heat. As I cook up the French toasts, I will lower the heat since my pan retains its heat very well.
  • Brown on both sides in your pan. Set aside the finished toasts on a serving plate.
  • Suggested toppings: nut butter, applesauce, cherry or blueberry sauce, strawberries with applesauce.
  • Store leftovers in a covered container in the refrigerator. You can also freeze these toasts quite well.
