Banana French Toast

Enjoy this healthy take on one of your favorite breakfast foods. This recipe was adapted from Neal Barnard's book, The Cancer Survivor's Guide

Ingredients

  • 8 ounces of firm tofu
  • 1 ripe banana
  • 1/2 cup water
  • 1 tsp maple syrup
  • 1 T vanilla extract
  • 1 tsp coriander
  • 8 slices whole grain bread

Instructions

  • Combine tofu and water in a blender. Process til mixture looks like a milk.
  • Add banana, maple syrup, vanilla and coriander. Process til smooth. Make sure there are no pieces of banana in the batter.
  • Pour the batter into a shallow bowl and dip each slice of bread. Or you can use a spatula and spread the batter on one side of the bread, lay it on a nonstick skillet. While it is cooking, spread the batter on the top side.
  • I like to preheat my nonstick pan, using a medium high heat. As I cook up the French toasts, I will lower the heat since my pan retains its heat very well.
  • Brown on both sides in your pan. Set aside the finished toasts on a serving plate.
  • Suggested toppings: nut butter, applesauce, cherry or blueberry sauce, strawberries with applesauce.
  • Store leftovers in a covered container in the refrigerator. You can also freeze these toasts quite well.
