Combine tofu and water in a blender. Process til mixture looks like a milk.
Add banana, maple syrup, vanilla and coriander. Process til smooth. Make sure there are no pieces of banana in the batter.
Pour the batter into a shallow bowl and dip each slice of bread. Or you can use a spatula and spread the batter on one side of the bread, lay it on a nonstick skillet. While it is cooking, spread the batter on the top side.
I like to preheat my nonstick pan, using a medium high heat. As I cook up the French toasts, I will lower the heat since my pan retains its heat very well.
Brown on both sides in your pan. Set aside the finished toasts on a serving plate.
Suggested toppings: nut butter, applesauce, cherry or blueberry sauce, strawberries with applesauce.
Store leftovers in a covered container in the refrigerator. You can also freeze these toasts quite well.
