Ingredients

  • 2 tbsp flour (oat flour, wheat flour, etc) Use rounded tablespoons
  • 2 tbsp carob powder Use level tablespoons
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 2 tbsp maple syrup
  • 1 tbsp unsweetened applesauce
  • 2.5 tbsp plant-based milk
  • 1/2 tsp vanilla or maple extract

Instructions

  • Find a nice roomy mug for your personal Christmas cake. Do not use a teacup. You want a hefty mug for this yummy recipe.
  • Add all the dry ingredients to the mug. Whisk them together til well blended.
  • Add the wet ingredients. Mix thoroughly.
  • Place your mug inside the microwave oven. Cook on high for one minute. Since microwave ovens vary, this may take 1.5 mnutes. After a minute, check and see how well your cake has baked. If you'd like your cake a little fudgy in the middle, a minute may be all you need. Enjoy!
