Christmas Cake in a Mug
Ingredients
- 2 tbsp flour (oat flour, wheat flour, etc) Use rounded tablespoons
- 2 tbsp carob powder Use level tablespoons
- 1/2 tsp baking powder
- 1/8 tsp salt
- 2 tbsp maple syrup
- 1 tbsp unsweetened applesauce
- 2.5 tbsp plant-based milk
- 1/2 tsp vanilla or maple extract
Instructions
- Find a nice roomy mug for your personal Christmas cake. Do not use a teacup. You want a hefty mug for this yummy recipe.
- Add all the dry ingredients to the mug. Whisk them together til well blended.
- Add the wet ingredients. Mix thoroughly.
- Place your mug inside the microwave oven. Cook on high for one minute. Since microwave ovens vary, this may take 1.5 mnutes. After a minute, check and see how well your cake has baked. If you'd like your cake a little fudgy in the middle, a minute may be all you need. Enjoy!
