Fall Is in the Air!

Fall is in the air–and that means I’m in the mood for pumpkin, winter squashes, and more sweet potatoes. All things orange. So I put together my collection of 10 recipes I’ve enjoyed over the years here in the HealthBites Kitchen. They’re all low in fat but high in flavor and healthy ingredients to help you live well naturally.

Breakfast Sweet Potato PuddingA creamy breakfast pudding made with sweet potato and a touch of maple syrup. Serve it up with some berries on top and a sprinkle of nuts.

Instant Pot Butternut Squash SoupA naturally sweet and creamy soup that can be made in the Instant Pot or on your stovetop for a delicious fall meal. This has become our favorite fall soup–made with butternut squash and sweet potatoes.

Golden Nuggets. Move over potato tots–Golden nuggets have arrived! Made from creamy baked sweet potato and whole grain goodness. If you use brown rice flour, you can even make them gluten-free.

 

Instant Pot Mashed Butternut Squash. Cook up a big bowl of butternut squash in just minutes using your Instant Pot. Mashed butternut squash can be a quick and easy meal when you use your pressure cooker. A great dish for the holidays or anytime throughout the year.

Holiday Stuffed Squash. This heart-stuffed squash makes a beautiful centerpiece for your holiday table or any time of the year! Fill acorn squash with lentils, brown rice, onions, cranberries, and fall seasonings and you’ll have a centerpiece for your table anytime!
