Maui Pineapple Tofu

At our Aloha Luau, the main entree was a Hawaiian flavored tofu. This tangy dish is an easy main dish to bring a tropical flair to a party or family dinner. Tofu fits well into the Hawaiian cuisine since there are so many Asians living in Hawaii. Tofu has been used for centuries as a plant-based dish. It is a great source of protein and contains all essential amino acids for good health. It is also an excellent source of calcium and iron.

Use an organic water-packed tofu. I prefer to use extra-firm whenever I can. Put it in your freezer overnight or longer. When tofu is frozen and thawed, the structure of this food changes from soft to a meatier texture. Tofu naturally has no flavor of its own but will absorb whatever you cook it in. The tofu in this recipe will soak up all the rich tomato flavor of our New Start ketchup and be a mouth-watering dish for your to enjoy.

You can serve this dish as is or add it to some brown rice and Asian vegetables. I like to add some green bell peppers sauteed in vegetable or herb broth. It will add some extra color and tang to make Maui Pineapple Tofu a dish to come back to again and again.

NEW START KETCHUP

In a small bowl, add 6 ounces of tomato paste with 1/2 cup of water, 2 teaspoons of maple syrup or honey and 2 tablespoons of lemon juice. Mix well until all the liquids are absorbed into the paste. This only takes about a minute to do. Then add the following seasonings–1/4 teaspoon salt, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder and 1/2 teaspoon dried basil. Mix well and refrigerate. Or you can serve immediately.  This is delicious with burgers and baked fries as well as in our Maui Pineapple Tofu.

Maui Pineapple Tofu

Ingredients

  • 14 ounce package of extra-firm tofu water-pack
  • 1 recipe of New Start Ketchup
  • 1/2 cup water
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 1/2 teaspoons cumin
  • 1 teaspoon salt optional
  • 15 ounce can of pineapple chunks or tidbits drained

Instructions

  • Freeze your package of tofu overnight. Thaw out on the counter or by cooking in the microwave for about 5 minutes. Drain the water from the package; squeeze the excess water from each piece of tofu. Slice it into small cubes and add to a nonstick pot or electric frying pan.
  • Mix in all the remaining ingredients and stir together well. Add more seasonings, as desired. Cook over a medium heat, stirring occasionally until the sauce thickens. This recipe yields 6 servings.
