Maui Pineapple Tofu
A tangy dish made from tofu and a luscious tomato sauce--sure to give you a taste of Hawaii!

- 14 ounce package of extra-firm tofu water-pack
- 1 recipe of New Start Ketchup
- 1/2 cup water
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 1/2 teaspoons cumin
- 1 teaspoon salt optional
- 15 ounce can of pineapple chunks or tidbits drained
Freeze your package of tofu overnight. Thaw out on the counter or by cooking in the microwave for about 5 minutes. Drain the water from the package; squeeze the excess water from each piece of tofu. Slice it into small cubes and add to a nonstick pot or electric frying pan.
Mix in all the remaining ingredients and stir together well. Add more seasonings, as desired. Cook over a medium heat, stirring occasionally until the sauce thickens. This recipe yields 6 servings.
