These easy Thumbprint Cookies are made with only 7 ingredients, so what could be easier for holiday eating? Oat flour, cashew butter, maple syrup, maple extract, a bit of baking powder, a dash of salt, and your jam of choice. I made mine with a favorite Simple Truth brand called 4 Fruit Fruit Spread (strawberries, cherries, raspberries, and red currants).
Making the cookies just couldn’t be easier. Mix all the ingredients (except for the fruit spread) in a medium-size mixing bowl. The batter should become thick and creamy. You may need to add a few tablespoons of water if the mix is too dry. Roll into small balls, about the size of a walnut. Set the balls on a baking sheet lined with parchment paper or a silicone mat. Use your finger to make an indentation in the center of the cookies. Fill them with a small amount of jelly. Then bake for 12 minutes in a 350-degree preheated oven.
GLUTEN-FREE FRIENDLY: Use gluten-free oat flour for this recipe.
NOTE: You can make your own oat flour by whizzing rolled oats in a high-speed blender. I use a Vitamix for this, moving gradually to the fastest setting on the blender. Be sure and process a small amount at a time. 1-2 cups should work fine. You can also make your own cashew butter by blending the nuts with a little bit of water. I like the nut butter in this recipe to be a little runny, so I prefer blending my own.

- 2-1/2 cups oat flour can be gluten-free if needed
- 1/2 cup cashew butter
- 2/3 cup maple syrup
- 1 tsp maple extract
- 2 tsp baking powder
- Scant salt
- Your favorite jam or jelly I used Simple Truth 4 Fruit Fruit Spread
Instructions
- Preheat the oven to 350 degrees.
- Combine all ingredients in a medium-size mixing bowl. Mix to form a stiff but creamy batter. Add a couple tablespoons of water, as needed.
- Make small balls from the batter about the size of a walnut. Place these on a baking sheet lined with parchment paper or a silicone baking mat.
- Using your finger, make a small indentation or well in the center of each cookie. Fill this well with a bit of jelly or jam.
- Bake for approximately 12 minutes in a pre-heated 350 degree oven. The cookies should turn a slight brown.
- Remove from oven cool slightly. Enjoy!
