Banana Split for breakfast? Is that really good for me? I’m not talking about a bowl of ice-cream. It’s a new, delicious way to make breakfast a favorite meal for you and your kids. Are you getting tired of sitting down to a bowl of oatmeal? Let’s dress it up with this easy recipe.
I start out by cutting 1 or 2 bananas lengthwise and laying them in a cereal bowl. Between the bananas, add 2 or 3 scoops of a cooked breakfast cereal (oatmeal, brown rice, or maybe some creamy millet). Spoon some hot fruit on top–I call it Golden Delight (made with peaches, crushed pineapple, and raisins). Fresh berries go on next. And if you like, you could even sprinkle a handful of nuts on top or some unsweetened coconut.
No, it’s not as sweet as a traditional banana split. But that’s okay. We don’t want to be eating 18 teaspoons of sugar for breakfast! That’s sure to weaken our body’s defense team. But whole grains and fruit are packed with antioxidants to help you keep your body strong.

Breakfast Banana Split
Ingredients
- 1/2 cup cooked brown rice, oatmeal or millet
- 1 banana peeled and split lengthwise
- 1/4 cup Golden Delight Sauce
- 1/4 cup fresh berries or frozen berries, thawed
- 1 tbsp chopped nuts, almond slices or unsweetened coconut optional
GOLDEN DELIGHT SAUCE
- 20 ounce can unsweetened, crushed pineapple including juice
- 16 ounce unsweetened peaches including juice
- 3/4 cup raisins
- 3 tbsp cornstarch
- 3 tbsp cool or cold water
Instructions
- MAKE BREAKFAST BANANA SPLIT: Use a small ice-cream scoop or ladle to scoop up cooked cereal. Place in a bowl and position banana halves on each side of the cereal scoop. Top with remaining ingredients.
- MAKE GOLDEN DELIGHT SAUCE: Add the canned fruit and their juices to a medium saucepan. Bring to a boil. In a measuring cup, mix the cornstarch with cool or cold water. Stir until the cornstarch dissolves and you have a cup that resembles milk. Add to the boiling fruit and stir until thickened (this should happen within a minute or two). Stir in the raisins. And serve over the cooked cereal.
