Can a bowl of soup help you lose weight? A recent study in the British Journal of Nutrition found that soup eaters tend to weigh less and have smaller waistlines than those who don’t eat soup very often. Of course, not all soups are created equal. Many soups can undermine our health goals when they include cream, cheese or meat. The best soups to lower weight are made with vegetable broth, tomato juice and lots of vegetables.
As the weather is cooling down, I like to power up with a bowl of warm soup. It is an easy way to invigorate my immune system so I have more protection against the flu and other viruses. It’s also a quick and easy way to add more vegetables to my day. And when I add some rice, quinoa or whole grain pasta in there, I’ve got a complete meal. You can bet I’ll be revved up with energy and fueled up for whatever I’ve got going.
Chickpea Noodle Soup is one of my favorites, pasta lover that I am. Kids love it too. And it’s ready in 30 minutes or less. Why could be better?
Chickpea Noodle Soup
Ingredients
- 1 large onion chopped
- 3 cloves garlic minced
- 3 stalks celery chopped
- 2 carrots chopped
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp coriander
- 1/4 tsp turmeric
- 1 tsp nutritional yeast flakes
- 14 ounce can of garbanzos
- 4-5 cups water
- 1/4 cup almond or soymilk
- 4 ounces of whole grain pasta
- 2 T flat-leaf parsley chopped (optional)
Instructions
- Saute’ onion in a large pot, using a few tablespoons of water. Cook for about 3 minutes or until the onions are translucent.
- Stir in the garlic, celery, carrots, thyme, coriander, oregano, turmeric and yeast flakes. Cook for another 3 minutes, stirring occasionally.
- Add the garbanzos, water, and milk. Bring to a boil.
- Stir in the pasta and simmer for 10-15 minutes or until the pasta is done. Add additional water, if needed. Finally, add the parsley and season with salt, if desired.
