As the temperatures soar, there’s nothing I like more than to enjoy a bowl of frozen fruit. Blueberries are my favorite! But sometimes, how about a bowl of ice-cream? Even better, right? Only I want the kind that is naturally sweet, without adding any high fat ingredients that will add pounds to my waistline or give me unwanted cholesterol.
I used to buy commercial non-dairy ice-cream but my husband always reminded me that the price was too high. And they were usually loaded with sugar and a long list of ingredients I could barely pronounce. Simple and healthy is my mantra in the kitchen. So I turn to fruit when I want a tasty treat. That’s why I love this banana soft serve ice-cream. It clicks all the boxes for me in my New Start kitchen:

I found a great deal at my local Sam’s Club store. Usually their bananas are green but this week I noticed some bunches that were getting ripe–those telltale spots were appearing on the skin. So I picked up several bunches and took them home. Some of them went into some cookies, but the rest got chopped into chunks and put in freezer bags. I froze them for about 6 hours until they felt hard as ice-cubes. Then I popped one of the bags into the food processor.
I pulsed the frozen bananas for about a minute until they broke apart. Then I added 1/2 cup of soy milk (we make ours homemade with our trusty SoyaJoy G4). I add the milk 1/4 cup at a time and process the bananas on my food processor’s highest speed. This takes another minute or two. All of a sudden, I have a soft-serve dream before me. Naturally sweet and ready to put smiles on everyone’s face. That’s all there is to it. Simple and sweet–and a great treat on these hot summer days.
