If you ever feel tired in the afternoon, don’t give Starbucks your hard-earned cash. Instead, grab a cucumber. There are enough high-fiber carbohydrates and B vitamins to give you longer-lasting and healthier energy than coffee, soda or energy drink. And no caffeine to mess with your nervous system either! Cucumbers are another smart way to add more water to your life. They’re 96% water. No wonder we feel they’re so refreshing, especially on a hot summer’s day.
Cucumbers are often found in tossed salads but they can also be the backbone of a delicious salad. They can stand on their own, without the help of lettuce. Garden Cucumber Salad is just one example. In this recipe, we have cukes in the salad and the salad dressing! A double win! Plus, it’s creamy which always turns any food into a comfort food for me.Â
It’s become one of our classic salads when summer rolls around. And because cukes are so inexpensive, this recipe is great if you’re watching your pennies. I hope it will become one of your summer favorites too! Happy cooking!
