This creamy dressing isn’t just for putting over our Garden Cucumber Salad. It’s a great dressing for any salad. Use it inside a pita-bread sandwich, a wrap, or on top of a baked potato. Or stir it in with some brown rice and beans. It’s such a versatile dressing, I turn to it again and again! And if you like creamy dressings like I do, this is the one for you. This recipe makes 1 cup of dressing and 2 tablespoons only has 3.8 grams of fat! Compare that with most commercial creamy dressings with 14-15 grams of fat! You can eat this, knowing you are eating food that will love you back–with greater health and energy!
Creamy Cuke Dressing
Ingredients
- 1 avocado
- 1/2 medium size cucumber
- 1 green onion or 1/4 cup chopped onions
- 2 T lemon juice
- 1 tsp honey or maple syrup optional
- 1/2 tsp salt or salt substitute
- 1/4 tsp dill weed or sweet basil
- 1/4 to 1/2 tsp garlic powder
Instructions
- Whiz all the ingredients until very smooth. Chill in the refrigerator before using in the Garden Cucumber Salad or any other salad. Keep refrigerated in an airtight container. May be used as a salad or sandwich dressing or as a sauce for vegetables.
- CHEF'S NOTE: In place of onions, add 4 cloves garlic, minced or sliced. Fresh dill is a delicious addition in place of the parsley. If you do not have fresh parsley, add ¼ cup dried parsley. But summertime is a wonderful time to buy or grow fresh herbs. And they make this salad so fresh and bursting with flavor!
