What do you put on pancakes and waffles? Though I love maple syrup just as much as anybody, I enjoy mixed berries so much more. They are my favorite way to power up in the morning. Berries and oatmeal is my favorite cereal and berries are my favorite topping over pancakes, toast and waffles. Blueberries, raspberries, strawberries–I love ’em all! And each one would be awesome on its own but why not a medley of berries?
And when I think how I’m loving my heart with each bite, it just makes me turn to my Berry Good Sauce any chance I get.
Berry HealthBites
A study in 2012 of over 90,000 women showed that those who ate 3 or more servings of blueberries and strawberries a week had 32% lower risk of getting a heart attack. That’s given me plenty of reason to keep adding these luscious fruits to my breakfast planner.
Berry Good Sauce
Ingredients
- 1 cup frozen blueberries thawed
- 1 cup frozen strawberries thawed
- 1 cup fresh raspberries thawed
- 2-3 T organic sugar
- 2 tsp cornstarch
Instructions
- Mix the berries in a medium saucepan. Add in the sugar.
- Stir while the berries get hot. Add a few tablespoons of water, if needed, to keep the fruit from sticking to the pan.
- In a small cup, mix the cornstarch with equal parts of cool or cold water. Mix until well blended.
- When the berries start to boil, add the cornstarch mixture. Stir well. In a few minutes, the berries will start to thicken. Serve immediately.
- CHEF'S NOTE: You can also use 3 cups of frozen mixed berries that you buy in the frozen section of your local grocery store.
