Breakfast Muesli

Ingredients

  • 3 cups rolled oats gluten-free, if needed
  • 2 cups water
  • 1 1/2 teaspoons vanilla or maple extract
  • 1 tsp salt
  • 1 banana peeled and sliced
  • 2 large apples unpeeled and cut in bite-size pieces
  • 1/2 cup raisins
  • 20 oz can of unsweetened crushed pineapple
  • 1/4 cup almond slivers
  • 1/4 cup unsweetened coconut flakes optional
  • 1/2 - 1 cup fresh raspberries

Instructions

  • Put oats in a mixing bowl. Add 2 cups water, a teaspoon of salt and 1 1/2 teaspoons of vanilla. Mix together. Set oats aside for a few minutes, allowing the liquid to be absorbed by the oats.
  • Meanwhile chop up your fruit.
  • Then add the raisins, coconut, and nuts. Mix well together.
  • Top with berries and serve immediately.
