4 Grain Pancakes

Ingredients

  • 1 1/4 cup whole wheat or spelt flour
  • 1 cup rolled oats
  • 1/4 cup cornmeal
  • 1/4 cup flaxseed meal
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups water
  • 1/4 cup unsweetened applesauce

Instructions

  • Mix dry ingredients in a large bowl; set aside.
  • Blend wet ingredients in your blender.
  • Pour wet ingredients in the bowl with the flours and other dry ingredients.
  • Mix well til mixture is moistened throughout.
  • You may have to add additional water as the flours tend to absorb the liquids.
  • Cook over medium heat on a non-stick griddle. Cook til golden brown.
  • Serve with nut butters, applesauce, blueberry sauce, and/or fresh fruit.
