4 Grain Pancakes

- 1 1/4 cup whole wheat or spelt flour
- 1 cup rolled oats
- 1/4 cup cornmeal
- 1/4 cup flaxseed meal
- 2 tablespoons maple syrup or honey
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 cups water
- 1/4 cup unsweetened applesauce
Mix dry ingredients in a large bowl; set aside.
Blend wet ingredients in your blender.
Pour wet ingredients in the bowl with the flours and other dry ingredients.
Mix well til mixture is moistened throughout.
You may have to add additional water as the flours tend to absorb the liquids.
Cook over medium heat on a non-stick griddle. Cook til golden brown.
Serve with nut butters, applesauce, blueberry sauce, and/or fresh fruit.
