Holiday Thumbprint Cookies

- 2-1/2 cups oat flour can be gluten-free if needed
- 1/2 cup cashew butter
- 2/3 cup maple syrup
- 1 tsp maple extract
- 2 tsp baking powder
- Scant salt
- Your favorite jam or jelly I used Simple Truth 4 Fruit Fruit Spread
Preheat the oven to 350 degrees.
Combine all ingredients in a medium-size mixing bowl. Mix to form a stiff but creamy batter. Add a couple tablespoons of water, as needed.
Make small balls from the batter about the size of a walnut. Place these on a baking sheet lined with parchment paper or a silicone baking mat.
Using your finger, make a small indentation or well in the center of each cookie. Fill this well with a bit of jelly or jam.
Bake for approximately 12 minutes in a pre-heated 350 degree oven. The cookies should turn a slight brown.
Remove from oven cool slightly. Enjoy!
