Holiday Carob Balls

- 1 cup walnuts ground fine
- 1/2 cup tahini
- 1/2 cup honey
- 1/3 cup carob powder
- 1/2 tsp salt
- 1 tsp vanilla
- 1/2 tsp peppermint flavoring optional
- 1/2 cup additional ground walnuts (optional) for topping, if desired
Grind nuts in your blender til fine or use a hand-operated nut grinder.
Empty ground nuts into a medium-size mixing bowl.
Add remaining ingredients and mix well.
Form into small balls.
If desired, roll some balls in ground walnuts for a topping.
Arrange balls on a baking sheet lined with wax paper or parchment paper.
Freeze for several hours or overnight.
